Ashland Chapter 315: What Food-Service Operators Must Know
Ashland’s Board of Health Chapter 315 governs fats, oils, and grease (FOG) management for every establishment that discharges FOG into the town’s wastewater system. The regulation covers restaurants, cafeterias, schools, hospitals, nursing homes, hotels, bakeries, bars where food is prepared, supermarkets, and food and meat processing facilities. If your operation fits that list, Chapter 315 applies to you.
Cleaning & Inspection Intervals
The required intervals differ depending on which type of device your kitchen uses:
- Internal grease traps (rated at no more than 50 gallons per minute, typically located under sinks) must be inspected at least every 7 days and cleaned at least every 30 days.
- External grease interceptors (rated at no less than 50 gallons per minute, typically installed below ground) must be inspected at least every 30 days and pumped and cleaned at least every 90 days, or whenever FOG accumulation reaches 25% of the interceptor’s effective capacity, whichever comes first.
Certification, Records & Enforcement
Proof of cleaning must be certified to the Ashland Department of Public Works. Missing a cleaning cycle or failing to submit proper certification can result in suspension of sewer service until full compliance is restored. Chapter 315 also prohibits the use of chemical or biological additives in grease traps or interceptors.
Annual records of cleaning, maintenance activity, and FOG transporter receipts must be submitted to the Ashland DPW by January 31 each year and kept on-premises for a minimum of two years. Those records are subject to inspection by the Board of Health or town officials at any reasonable time. All FOG transporters working in Ashland must be licensed by the Board of Health and must contract with a DEP-licensed facility for waste disposal.
